PUMPKIN STREUSEL MUFFINS

Ingredients
Muffins
  • 1¾ cups flour
  • 4 Tbsp SACO Cultured Buttermilk Blend
  • ½ cup sugar
  • 1 Tbsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ tsp nutmeg
  • 1 egg
  • ½ cup water
  • ⅓ cup vegetable oil
  • 1 cup canned pumpkin
  • 8 oz cream cheese, cut into
  • 12 even cubes
Streusel
  • ¼ cup brown sugar
  • ¼ cup pecans, chopped
  • 1 tsp cinnamon
  • 1 Tbsp butter
Instructions
Muffins
  1. Preheat oven to 400°F.
  2. In a large mixing bowl combine the first seven ingredients.
  3. In a separate bowl beat the eggs; add water, oil and pumpkin.
  4. Stir into dry ingredients until moistened.
  5. Fill 12 greased muffin cups ⅔ full; place a square of cream cheese in the center of each cup.
  6. Top with remaining batter.
  7. Sprinkle with streusel.
  8. Bake for 18 to 22 minutes or until done.
Streusel
  1. In a small bowl combine brown sugar, pecans and cinnamon in a small bowl.
  2. Cut in butter until crumbly.
  3. Sprinkle over batter.
